Update to modern frameworks

This is still using Remix 1.7.2, which is p old. I think it might make sense to do this in several parts, which shouldn't be too onerous because of how limited the parts that actually use Remix are. Updating to latest 1.x release, then to Remix v2, then to latest React Router/Vite, seems like a good way to go.
